1/4 Beef (please read description)

Please understand that we do not yet ship our beef, so pickup at ranch or delivery at a rate of $1 per mile is what is available.

When purchasing a 1/4 cow, a minimum $650 deposit will be required in order to place order. Total cost is $1300, which will be collected upon pickup or delivery (minus the deposit), or you can pay in full to secure your order. Also be advised that a 3% transaction fee is added if using Venmo or Credit Card.

Approx. 95-105 lbs of meat/organs/bones total, split up between steak cuts, braising cuts, ground beef and bones (if desired). Also includes two surprise gifts (spice rub, cooking tallow, honey, etc.).

Approximate yield is as follows:

30 pounds mixed steak cuts (ribeye, porterhouse, t-bone, tenderloin, flank, skirt, tri-tip, sirloin, NY strip, etc.).

NOTE - Because the USDA requires that the spine of cattle are kept if judged to be over 30 months in age, not all cattle that we process will keep the spine, and thus, we lose the Porterhouse and T-Bone on those animals. When they are available, you will receive them in your order, but when they are not, we substitute with other tier 1 steaks.

30 pounds mixed braising cuts (briskets, stew meat, roasts, short ribs, london broil, shoulder steak, osso bucco, etc.)

30 pounds of ground beef (30 x 1 pound packages or 15 × 2 pound packs)

10 pounds of bones, organs, or both

Keep in mind that each animal is different in size and hanging weight, and therefore this will always product slightly different yield volumes. This also goes for the individual cuts. For instance, everyone wants ribeye, but keep in mind that each cow only has 13 ribs per side to give, for anywhere from 16-26 ribeyes per cow depending on thickness. So if buying a 1/4 cow, you’ll likely get 4-6 ribeye steaks

Cut counts are approximate and are contingent upon package weights. Some customization of cuts possible upon request.
