This cut is the The Thor's Hammer (also called Volcano Cut Shank) comes from the top part of the leg of the cow. While this is one of the toughest cuts on the animal, it's full of flavor due to the high collagen content, and if cooked correctly, is a pheonomal cut to make pulled beef BBQ sandwiches, carnitas tacos, as a nice roast, or for a great stew or chili.

Bone in beef shanks needs to be slow cooked – either braised or roasted – to break down the tough meat to soften it into succulent tenderness. This cut is full of flavor and is sure to be a crowd-pleaser!

Another great method is to smoke - Spray the meat with cooking oil or with our melted Slate Hill Tallow, then season the meat with our Slate Hill Steak Steasoning/Rub or your favorite beef rub. Smoke the beef hammer /shank at 250 degrees until it reaches 160 degrees internally. This should take around 4 hours.

NOTE- Once done with the shank, give the dog the bone, he’ll love it!!
